Our Vice Echanson and Cellar Master Tim Evankovich, who most recently guided us through how to make a zesty summer martini, has set up another Zoom session for us, this time with Victor Valdivia, one of the highest-rated sommeliers in our area.
A student of the Court of Master Sommeliers, the Head Sommelier at Grey Oaks and one of the Chaîne’s roster of distinguished Maître Sommeliers, Victor will share with us some of his extensive knowledge of viniculture focusing on the Napa Valley region and the king of red wine grape varietals cabernet sauvignon.
The beauty of this resilient grape is the many different styles of wine it’s capable of yielding. Planted in virtually every red-wine producing region in the world, cabernet sauvignon flourishes particularly well in California. Napa’s warm weather, long growing season, diverse soil structures, and remarkable microclimates have made it especially attractive to vintners. The region boasts close to 400 wineries occupying over 20,000 acres of vineyards.
Tim and Victor will guide us through this legendary landscape and some of the exceptional wines created there.
